Through the Europe-wide CleanSmoke Organic Campaign, the Swiss organic association BioSuisse (“Knospe”) has now also been convinced of the product- and environmentally-friendly smoking process. In Switzerland, Migros with its subsidiary Micarna is one of the most important meat processors – from this side, the request for the CleanSmoke smoking process was emphatically brought to the attention of the CleanSmoke Organic Campaign and BioSuisse. In future – after a long and complex evaluation process by Bio Suisse – not only conventional products but also organic products certified by BioSuisse to a higher standard than the EU organic standard will be smoked there with pre-purified smoke.
In Germany, too, the product- and environmentally-friendly smoking process is gaining increasing recognition among organic associations and producers/processors. Naturland was the first association to include this smoking process in its processing standards, followed by Biokreis; a positive decision by Bioland is expected by the end of the year.
